Chicken Breasts Marsala

Ingredients
- 4 skinless boneless chicken breast halves
- 2 tablespoons vegetable oil
- 1/2 cup all-purpose flour
- 1/4 cup shallots or green onions -- chopped
- 1 tablespoon vegetable oil
- 1 cup sliced fresh mushrooms
- 1/2 cup chicken broth
- 1/4 cup marsala
Lightly coat breast fillets in flour and saute in non-stick
pan with vegetable oil until lightly browned. Allow to continue
cooking on low heat while preparing sauce. Saute shallots or
green onions in vegetable oil until transparent. Add mushrooms
and cook until tender. Add broth and cook until liquid is reduced
to about half. Add marsala wine and heat sauce through. Add
sauce to chicken fillets and heat through. Serve hot.
