Chicken Paprika

Ingredients
- 1 1/2 cups vegetable juice
- 1 tablespoon flour
- 1 1/2 tablespoons paprika
- salt and pepper -- to taste
- 2 teaspoons olive oil
- 1 cup sliced green onions including tops
- 2 garlic clove -- minced
- 1 pound skinless chicken breasts -- cut 1/2 inch strips
- 1/4 cup sour cream
- 2 cups hot cooked rice
- fresh parsley -- snipped, for garnish
Combine vegetable juice, flour, paprika, salt and pepper in small bowl.
Set aside. Heat oil in medium skillet over medium heat. Add
onions and garlic; cook 1 minute. Add chicken strips and cook
until chicken is lightly browned. Add vegetable juice mixture.
Cook until mixture boils, stirring often. Reduce heat to low;
cover and simmer 15 minutes. Remove from heat and stir in sour
cream. Sprinkle with parsley.
