Chicken Piccata

Ingredients
- 1 1/2 pounds boneless chicken breasts -- pounded thin
- 1/4 cup flour -- seasoned with salt and pepper
- 3 tablespoons olive oil
- 2 tablespoons butter
- 2 cloves garlic -- minced
- 1/4 cup dry white wine
- 1/4 cup lemon juice
- parsley -- chopped
- grated lemon rind
Dredge chicken in flour on both sides. In a large skillet,
lightly brown chicken in oil and butter on both sides. Remove and
keep warm. Add garlic; saute quickly. Add wine and lemon juice;
cook over high heat until liquid is reduced by half. Spoon over
chicken and sprinkle with grated lemon and chopped parsley.
