Bacony Chicken Breasts

Ingredients
- 16 ounces canned and drained small whole potatoes
- 6 ounce can mushroom stem and pieces, drained
- 1/2 teaspoon salt
- 1/2 teaspoon paprika
- 4 slices bacon, quartered
- 2 tablespoons butter
- 1 tablespoon vegetable oil
- 4 boneless chicken breasts
Preheat broiler. Slice potatoes 1/2 inch thick and pat dry with paper towels. Arrange in bottom of a 13 x 9 inch broiler pan. Sprinkle with salt and paprika. Cover with mushrooms and top with bacon. Broil 10 minutes, turning occasionally. Meanwhile in a heavy skillet, melt butter with oil over medium heat. Saute chicken breasts 4 minutes per side, or until golden brown and tender. Transfer to serving plate. Top with broiled potatoes, mushrooms and bacon.
